I know this is okay on my diet, I’m thinking you South Beachers can use it too, but I don’t know the plan, so I’m not 100% sure. Anyway, here it is:
- 1 lb very lean ground beef
- 1/2 cup onion, chopped
- 1 can (8 oz) tomato sauce
- 1 envelope taco seasoning
- 1 can fat free refried beans
- 6 whole wheat tortillas
- 2 cups fat free shredded Cheddar
Heat oven to 350. Brown the ground beef and onion. Drain if necessary. Add tomato sauce, taco seasoning and beans. If you like spicy, add spice at this point. Layer half the tortillas in the bottom of a baking dish. Cover with half the meat mixture and half the cheese. Repeat layers. Bake for 30 minutes.
Even my kids like this one!
