Pumpkin Gingerbread

I made this tonight and love it. I modified a recipe that I found on

Beat until smooth:

1/4 C oil
1/4 C applesauce
1/4 C unsulphured molasses
2 eggs

Add and beat until well blended:

1/3 C water

Stir in:

1/2 15 oz. can pumpkin
1 tsp. ginger
1/2 tsp. allspice
1/2 tsp. cinnamon
1/2 tsp. cloves

In separate bowl, combine:

1 3/4 C white whole wheat flour
1/2 tsp. pure stevia extract powder (or other sweetener equivalent in sweetness to 1 C sugar.)
1 tsp. baking soda
1/4 tsp. baking powder
1/2 tsp. salt

Add dry ingredients to wet and stir until just combined. Pour into a greased 9X5 loaf pan. Bake at 350 deg. about 40-50 minutes.
