Quiche Questions

Can any quiche be made crust-less just by omitting the crust and pouring the egg mixture directly into a greased pie pan?  Or do I need either a “crust-less quiche” recipe or to modify a “regular quiche” recipe?

While I’m at it, does anyone have a favorite quiche recipe to share?  I LOVE veggie quiches; especially spinach and I also like breakfast quiches.

  1. I think quiche without a crust might be the similar to a frittata? When I make quiche, I just add whatever I have in the house… broccoli, asparagus, mushrooms, ham, any kind of cheese (except the feta wasn’t so good).

    After doing a quick Google search, it seems that you just pour the egg custard straight into the pan. One site recommended layering all the meat and veggies on the bottom and pouring the eggs on top. Even with a crust I tend to layer the ingredients and pour the eggs over it all anyway.

    My favorite is one filled with steamed broccoli, red onions, and a bit of cheese. Yum!
