Roasted Peppers Rock. I love ‘em! I stood in line for over an hour a few weeks ago to get a whole bushel bag of locally grown green chiles roasted for me! Ohhhhh it smelled so good! I now have over 200 peppers in my garage freezer. I’m glad I don’t have to roast ‘em myself, but I have done it before and it is super easy.
Here is a link to step-by-step instructions for roasting peppers. Personally, I did mine over the gas flame on my stove. But then, I like fire… Doing them in the broiler also works, but isn’t as much fun. One tip they don’t say in the instructions is that if you’re doing them in the broiler, flatten the pepper halves out with your hand before placing them on the pan.
