Midnight Tilapia

Okay, I know. Midnight snacking is taboo!

But I’ve been ill for two days and have had nothing to eat. Around eleven o’clock I started feeling better and my appetite came back with a vengeance. So, as delicious as this tasty recipe is, I really recommend you not eat it at midnight, like I just did.
Midnight Tilapa

1 tilapa fillet

olive oil

lemon pepper to taste

lemon juice

Rotel tomatoes (I like the hot ones)

Cover tilapa fillet with lemon juice and sprinkle generously with lemon pepper. Over medium heat cook tilapa in olive oil for about 8 minutes. Serve with rotel tomatoes on top.

Easy. Yummy!
