I have made this several times, and with some tweaking it is becoming a staple in our diet.
Brown Rice Curry
1 c uncooked brown rice
1 green or red pepper, chopped well
1 onion, chopped well
5-6 fresh mushrooms, chopped
1/2 cup chopped or shredded cooked chicken (leftovers)
2 1/2 c chicken stock
2 T olive oil (I just splash some in there so it is probably less)
6 cloves garlic, minced or finely chopped
2 t curry powder
1-2 shakes of red pepper flakes (if you like kick)
Heat stock just to boiling. Add all the ingredients except the chicken. Reduce to simmer and cook until water is absorbed (about 45 minutes). Add cooked chicken, stir in and let sit about 10 minutes. Fluff and enjoy.
