Punkin Center Pie

Pastry for a 10-inch pie, 1 crust
3/4 cup evap. skim milk
1/3 tsp Stevia Extract Powder or 1 tsp Green Stevia Powder
3 eggs
1 can (16 oz) solid pack pumpkin OR 2 cups steamed and mashed pumpkin
3/4 cup sugarfree frozen apple juice concentrate OR simmer 1 cup natural apple juice to reduce to 3/4 cup
1 1/4 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp cloves
Up to 1/4 tsp ginger
1/4 tsp salt
2 tbsp nonfat dry milk

1.  Heat oven to 350.  Beat evap milk, stevia, eggs and pumpkin.  Mix in remaining ingredients until well combined.

2.  Pour filling into unbaked pie shell.  Bake about 60-65 inutes or until aknife inserted near middle comes out clean.  To prevent over-browning cover the edge of the crust with foil during the last 15 minutes.

3.  Cool.  Cover and chill.  Tastes best the second day.
