Since being on South Beach I have not been able to eat my oatmeal the way I used to: loaded with butter, fructose, and raisins… I have been experimenting with various ways to make it creamy without adding a lot of fat and haven’t been very successful until the other morning when I decided to cook it with 1/2 C milk and 1/2 C water. It was so creamy and delicious that I didn’t need any butter at all!
Also, I have been pouting about not being able to put raisins in it. Then it occurred to me the other day that I can chop up an apple and stir that into it. It was pretty good. But this morning I didn’t have any apples so I decided to try a pear. I cooked 1/2 C old fashioned oats with 1/2 C 1 % milk and 1/2 C water in the microwave for about 2 1/2 minutes. I added the chopped pear, a bit of salt and stevia to taste. Yum….THAT was good! So finally after much trial and error I had a truly enjoyable bowl of oatmeal on South Beach. Hooray!
