Salmon Baked in Wine and Tarragon

Caroline asked about Salmon recipes. This one, from The Junior League’s Centennial Cookbook is easy, healthy and yummy! (It also works well with those cool individually frozen Tilapia fillets you can get at Sam’s)
4 salmon steaks
2 T butter
1/8 tsp. salt
1/4 tsp. white pepper (I use black)
2 T lemon juice
1/4 C white wine
1/2 tsp. dried tarragon

Oven 450 deg. Coat a baking dish with cooking spray. Arrange salmon in dish and rub with butter. Mix salt, pepper, lemon juice, wine and tarragon. Pour over fish.

Bake, uncovered, until fish flakes easily with a fork, about 10 minutes per inch of thickness.
