Here’s a couple of vegetable casseroles that I’ve got.
Scalloped Squash
2 cups cooked mashed squash
1 cup sour cream
1 can cream of chicken soup
1 small onion - grated
1 1/2 cups seasoned herb dressing
margarine
Put layers of squash mixture (squash, sour cream, cream of chicken, onion) with little dabs of margarine on top and dressing mix. Bake at 300 for 20-30 minutes
Zucchine Casserole
3 large zucchini
Italian seasonings
Garlic salt
Parmesan cheese
12oz. grated mozzarella cheese (2cup package)
1 medium onion (diced)
Slice zucchini and cover bottom of 9×13 pan. Sprinkle part of diced onion on top of zucchini. Sprinkle Italian seasonings and garlic salt, mozzarella cheese. Make another layer and top with parmesan cheese. You might like to add a very thin sliced tomato on top of the cheese to add color. Cover casserole with foil and bake for 1 hour at 375. After about 45 minutes take off foil and let top brown.
Brocolli Salad
3 brocolli heads
1/4 cup chopped onion
1/2 cup golden raisins
1 cup sunflower seeds
10 pieces of bacon
1 cup of mayo
3 tablespoons balsamic vinegar
2 tablespoons sugar
Cut brocolli heads. Cook bacon, then crumble.
Dressing - mayo, vinegar, sugar, onion, raisins.
*Put dressing on brocolli a few hours before serving. Add bacon and sunflower seeds right before serving.
