For my veggie challenge I tried Chayote. It’s a type of squash and is popular in Mexico, and thus seemed the ideal choice for someone staying in El Paso
We used this recipe for a soup which was good. It was thick and tasty so would be a good soup to eat to warm yourself up on a cold day. I have to admit that we may not make this paricular soup again, but we’ve since found some more recipes that use chayote that we want to try, so we’ll keep you posted
