Quick & Easy Meal Ideas

Friends…. once again, life is hectic here for me. (I have no idea how all of you do it who have kids and families and stuff; I’m simply amazed because I can barely keep track of myself!)

Anyway, all that to say, my stuff finally got here on Saturday and is now unpacked. Which means I have dishes. And can cook. The only problem is that I have this pesky thing called a “qualifying exam” to deal with on the 20th (happy birthday to me, huh?) which is going to require a lot of studying/reading/etc. I want to get back to eating healthy. So I’m asking for recipe ideas. I’d love any ideas you have on things that a). are healthy (duh); b). can be assembled in under 30 minutes (it’s ok if the oven/stovetop-time is longer); c). make great leftovers (as I’m cooking for one — I have a mountain of gladware); and d). taste yummy. I’d love to be able to cook 2-3 “meals” and have them last me for the next 10 days, as supplemented by turkey sandwiches and fruit and steamed broccoli. Otherwise, I’m going to be eating Lean Cuisine for 10 days, and I really don’t want to eat all those preservatives.

  1. Sounds just like me.
    Things I eat very often cos they’re quick:
    Stir fry - lots of different veg chopped up, usually with chicken. I use soy sauce and various spices to flavour it. Or do a Thai style coconut curry with light coconut milk, peanut butter and Thai curry paste. Try google for recipes.
    Chicken paprikash - recipe on Kalyn’s kitchen. In fact just go to Kalyn’s kitchen and look at her archives. She’s got a whole section on ‘Easy South Beach recipes’.
    Chuck it in the oven and walk away for 30 minutes sort of things like sausages, roast sweet potato, other veg you can roast. There are lots of things that taste good if you sprinkle them with olive oil, balsamic vineger and herbs and roast them at 180C for 30 minutes (aubergine, courgette, chicken breasts (maybe more like an hour), broccoli, pretty much any veg).
    Moussaka or other bake things. Can take a while to prepare, but once it’s done, you can eat it for several days running.

  3. Anne do you have a slow cooker? Just wondered as we’ve found it a good way to make things like chili, stew, casserole type things (where you just bung it all in and leave it to cook) and since we’ve got a fairly big one we have leftovers. Cooking for one, even with a smaller version, you’d probably still end up with left overs.

    Otherwise, if you don’t want to go out and buy sometihng new, there are lots of things you can just bung in the oven and leave for a couple of housrs.

    I have been living on quiche. Its so easy to make and totally good still w/o crust. If you go to http://recipeready.blogspot.com/, she has a really good recipe for one. I also make chicken breast a lot. Just bake a couple with a lot of seasoning and you can add it to salads, or have it with roasted veggies. MMMMMM, I am getting addicted to roasted veggies. IT brings on a whole new flavor! You can also stuff chicken breast with different cheeses and make it really yummy. Good luck. I am not great at coming up with different ideas, but hopefully that helps a little.

  7. Anne, I was going to do a comment with links to some of the best recipes here on OWOA, but I accidentally deleted it. Waaah! Sorry, but I’m not going to go hunting for all the links again… :-(

    I love roasted vegetables for quick and easy meals. Chop up your favorite veggies, spray with a small amount of olive oil, shake on seasonings, salt, pepper, and roast in the oven at 400 degrees. Time varies on the veggies you are baking. Yum!
