Fruit Salad

Fruit Salad
1 c lemon yogurt
1 t vanilla
1 c grapes
1c apple, chunked
1 large orange, cut in segments
1 ripe banana, chunked
1/4 c wheat germ or fat-free granola (below) for topping.

Mix well and serve immediately.

Forget-the-Fat Granola
3 c old-fashioned oats
3/4 c wheat germ
1/3 c raw almonds, chopped
2 T sunflower seeds, raw
1 t cinnamon
1 t salt
1 c unsweetened apple juice concentrate, thawed
1 c dried cranberries or raisins (add after baking)

Preheat oven to 325. Combine dry ingredients; add juice. Spread on large baking sheet. Bake stirring every 5 minutes or so for 40 minutes. Cool. Mix in raisins or cranberries. Will store well in well-sealed container at room temp. for up to 2 months.
