I don’t know about you, but where I live…it’s HOT! Gazpacho is a wonderful cold way to get your veggies, and curb your appetite before a meal.
1 medium red bell pepper, seeded
1 medium green bell pepper, seeded
1/2 cucumber, peeled (I don’t like cucumber so I use zucchini)
1/2 small red onion
2 tomatoes
1 1/2 cups V-8 juice
1 1/2 cups tomato juice
1 Tbsp white wine vinegar
1 clove garlic
1 tsp Tabasco
1/4 cup fresh basil, chopped
1/4 tsp cumin
1 tsp creole seasoning
Now the recipe calls for each solid ingredient to be finely chopped/diced. Save yourself time and throw it all in a food processor! Chill and serve cold. Makes 12 1/2 cup servings.
