My Favorite Holiday “Cookie”: Fruit Bites These little treats are great anytime of year - and an ideal “cookie” to take to cookie exchanges, to open houses or to use as gifts. They are nutrient-packed and naturally sweet and satisfying!
1/2 cup dried apricots
1/2 cup dried cranberries
1/2 cup raisins
1/2 cup dried plums (prunes!)
1/2 cup unsweetened pitted dates
1/2 cup flaked coconut, preferably unsweetened
1/2 cup pecans or walnuts, chopped
1 tsp. fresh orange zest
Juice from 1 orange
1/2 cup additional finely chopped nuts or coconut
In a blender or food processor, grind the dried fruits. Add the coconut, nuts, orange zest and orange juice. Mix well and form into small balls. Roll in coconut or finely chopped nuts. Makes four dozen bites; 2 bites are the equivalent of 1 serving of fruit.
