Baked Chicken Chimichangas


  • 1 1/2 cups cooked chicken, cubed or shredded
  • 1 16-oz. can fat free refried beans
  • 1 8-oz. jar salsa
  • 1 4.5-oz. can mild chilies
  • 2 T. mild taco seasoning
  • 1/2 cup green onions, chopped
  • 6 large reduced-fat flour tortillas
  • 1 cup 2% milk grated cheddar cheese
  • Preheat oven to 400. Mix chicken, beans, salsa, chilies, seasoning, and onions. Warm tortillas in microwave. Assemble chimichangas with 1 tortilla and 1/2 cup chicken and bean mixture and even portions of cheese. Place chimis in a sprayed baking dish and bake uncovered for about 20 minutes or until heated through. Each chimichanga is 7 Weight Watchers points.
