Spicy Cheese Soup

I got this recipe from a WW meeting, I haven’t tried it yet, but I assure you I will be soon.

  • 6 cups chicken broth (can or bouillon)
  • 2 bags of frozen California vegetables (16 oz bag)
  • 1 chopped onion
  • 1 can Rotal Origianl Diced Tomatoes and Greeen Chiles (10 oz)
  • 10 oz Velveeta Light Cheese

Bring broth and onion to a boil. Add veggies and Rotel and bring back to a boil. Turn down and simmer for 45 minutes to 1 hour. Add Velveeta cheese and stir until it melts. Yeilds 12 servings.

Sit, eat and enjoy.
