Take Blest’s lentil taco recipe (where did it go? I tried searching for it and couldn’t find it… can you re-post?), eat, enjoy, and put a serving or two in the freezer for later. When you come across that serving or two several months later when trying to eat through your fridge because you’re moving, mix the following in a pot on the stovetop: 1 serving frozen lentil tacos, 1 can black beans (I use organic because they have the least sodium of all the ones I can find), and 1 can petite diced tomatoes. Heat, add the smallest amount of cheese that you can handle, and enjoy!! So yummy, and it stretches to 3-4 servings!!
