I thought I would share a recipe that we tried this week and I thoroughly enjoyed. I plan on incorporating this into our meals quite a bit, and especially after the baby arrives and I’m trying to lose pregnancy weight…
Chicken Broccoli Lo Mein
Yields Four Servings

8 ounces thin spaghetti (if linguine is available, I prefer this over the spaghetti)
2/3 pound skinless, boneless chicken (3 chicken breasts, dethawed overnnight)
1 cup fresh button mushrooms
1 tablespoon vegetable oil
1 bag frozen broccoli pieces
3 tablespoons soy sauce
1 tablespoon white wine vinegar
1 tablespoon ketchup
Cook pasta as directed. Clean & chop mushrooms. Heat oil. Cut chicken in bite size pieces. When all the chicken is cut, add it to the skillet. Add mushrooms and broccoli to the skillet. Cook for five to six minutes or until mushrooms have released their liquid and chicken is cooked through. Add soy sauce, vinegar, and ketchup. Stir to combine. Add cooked pasta and serve immediately.
I left out the mushrooms (I’m sorry, it’s a texture thing - eeewww), and it was delicious. I think it would be fabulous over brown rice, too, and I’m going to try that next time I have some.

Just an update on me … I’m starting to get that feeling of dread that I’ve had at the end of each of my pregnancies (7 weeks to go - woot!). So far I’ve gained about 24 pounds - by far the least I’ve gained in any of my 3 pregnancies. (Although I was a little worried that the nine pound jump I had last month was going to start a downward trend - thankfully I redeemed myself this week at weigh-in and had done really well the last month.)
The weight cloud is starting to loom over me, and the fact that I really want to lose a good chunk of weight this time before we start the if/when talk about a 4th baby. Because I have always had issues with my milk supply, jumping on the dieting bandwagon right at six weeks just doesn’t work for me … I still need to keep my calories higher than the nursing norm to maintain a milk supply. One thing I am going to concentrate on is MORE veggies. I love them and with the baby arriving in May, this will be the perfect jumpstart into summer veggies from the farmer’s market, I hope. I’m also going to really, really, really, really work on getting my water in. I’m one of those that just do NOT like the taste of water and it is so hard to make myself drink it. Anyway, I’m trying to fight those “down” feelings and get ready to enjoy this new season in our family with our new baby, yet with somewhat of a gameplan in place.
