Brown Rice Curry

1 c uncooked brown rice

1 green pepper, finely chopped

1 onion, finely chopped

2 1/2 c chicken stock

2 T olive oil

3 garlic cloves, minced

1/2 t onion powder

1/2 t garlic powder

2 t curry powder

Heat water in large pot, bringing to a boil. Add all ingredients and simmer, covered, until water is absorbed into rice: about an hour. Let stand for 10 minutes or so, fluff, and enjoy!
