Asian Chicken Noodle Soup

I haven’t tried this, but when I found it in this month’s MSL, I knew I would like it. :)

3 1/2 c chicken broth

1 t soy sauce

1 t gr. ginger

generous dash black pepper

1-2 medium carrots, sliced

1 stalk celery, sliced

1/2 red pepper, cut in strips

2 green onions, sliced

1-2 cloves garlic, minced

1/2 c broken-up uncooked Asian noodles

1 c shredded cooked chicken.

Heat broth, seasonings, and veggies in large saucepan, bringing to a boil. Stir in noodles and chicken; reduce heat to medium. Cook for about 10 minutes.
