Open Faced Turkey Burgers

Okay…these things need a better name - I’m saying that right now.  I saw this recipe on Rachael Ray when we were traveling. (gotta love that hotel cable)  I checked her website and couldn’t find an official recipe, but that’s okay!  I’ll just tell you what I did and you can improv from there!

Take a package of ground turkey and dump it in a bowl.  Add in diced red peppers, onions, garlic, italian seasoning, salt and pepper, tomato paste, and a little extra-virgin olive oil.  I forgot to add parmesan last night - but in the future I will toss that in too!  Measurements are all up to you. I didn’t measure anything last night cause I was pretending to be Rachael Ray. :razz:   Mix it up and make good sized patties.

Take several large portobello mushroom caps - you need one per burger patty as this is your bun - and place them on a baking sheet or in a baking dish.  Drizzle with extra-virgin olive oil and dash on some salt and pepper.   Bake at 400 degrees until tender and juicy. I put mine in while my Foreman grill was heating up and then kept an eye on them.

Cook your turkey burgers.  Rachael did them in a skillet.  I put mine on the Foreman grill.  They would also be fine grilled outside or done in your broiler…whatever! 

Top your cooked mushrooms with lettuce and tomato.  Then put your patties on top.  Melt a little mozzarella on top of that!  YUM!!!

This recipe is highly suitable for all phases of South Beach - and also pleased the hubby.
