Shrimp Jambalaya

Okay, so I already posted a recipe here but wanted to come over here and share.  I am quite lazy however and don’t want to retype it so go visit here and check it out.

So we LOVE creole style food. Big problem with it though…it could care less about our shrinking waste line.   Jeff and I are on the downward slide and we want to continue that direction so I’ve looked for alternatives to the foods we love.  This is one that has become a favorite.  We eat it normally once a week at the very least every other week.  Please remember, this is a HEALTHY alternative to the regular.  The recipe I am going to give you is from LA Weightloss and is 1 LARGE serving.

Shrimp Jambalaya

5 green onions

1/2 medium green pepper, chopped

1 clove garlic, finely chopped (I tend to add more)

6oz fresh peeled shrimp (I’m lazy so I just use the salad shrimp…not the itty bitty baby ones though)

1 c. Herbox very low sodium chix broth (I have now found no sodium broth)

1/4 tsp lite salt

1/8 tsp pepper

1/8 tsp thyme

1/8 tsp red pepper sauce

1 bay leaf

1 small tomato chopped

1/4 c. uncooked rice

Spray Dutch oven with Pam.  Cook onion, green pepper, and garlic over low heat until tender.

Add shrimp and cook until shrimp is pink.  Remove from Dutch oven; reserve.

In Dutch oven, combine rice, chix broth, salt, pepper, thyme, red pepper sauce, bay leaf, and tomato.  Bring to boil, cover and simmer until rice is tender.

Add shrimp mixture to warm.

 Enjoy!  Mind you I change the seasonings up a bit.  We like spicy so I add Mash (a puree of hot peppers that we found here in the South) and some curry powder
