Corn Salsa

Corn Salsa

1 can corn-drained (or 1 1/2 c frozen corn, thawed)

1 med. tomato, diced

1 med. cucumber, peeled, seeded, diced

1/4 red onion, diced

1 garlic glove, minced

2 T finely chopped cilantro

splash lime or lemon juice, or 1 t grated peel

hot pepper sauce to taste

bitty splash of low-fat italian dressing

Mix up and let marinate 30 minutes before serving! I used it in a wrap as condiment and it was perfection. (It is also great as a little side dish on a bed of lettuce; no tortillas necessary.)
