Mediterranean Hummus

1/4 C chopped bottled roasted red peppers
1/4 cup pitted kalamata olives
3 Tbsp lemon juice
2 tsps extra virgin olive oil
1/4 tsp salt
1/8 tsp pepper
2 cloves garlic
1 can garbanzo beans drained and rinsed.

Process.

Serving size: 2 Tbsps
Calories: 49 Fat:1.3g

I’ve been eating mine with sliced radishes and yellow squash. I have been pleasantly surprised at how good it is. I always knew I liked hummus, but I didn’t know I liked it without crackers or chips.
