Japanese Chicken

It’s Friday, right?  I haven’t posted a recipe yet but I made this last night and not only was it yummy, but all four boys loved it.  That doesn’t happen often.

Japanese Chicken

1/2 cup nonfat lemon yogurt or plain yogurt with 2 Tbsp lemon juice

1/4 cup Japanese style soy sauce (I used Teriyaki sauce)

1 tsp. grated ginger

1 clove garlic, minced

3-4 boneless skinless chicken breasts, cut in half

Mix ingredients and turn chicken breasts to coat thoroughly.  Line a pan with foil and place chicken on the foil.  Pour remaining sauce over the chicken. Place pan in a cold oven, set to 425 and turn on.  Bake 45 minutes.  About 200 calories a serving.  I served it with broccoli and brown rice.  Enjoy!
