I’ve been thoroughly chastised… Once for not remembering how to log in and post. And secondly, for not sharing this cooking experiment with you all. I am one lame blogger. Sorry! Now that I’ve been reminded on how to log in (thanks BWS!)… I posted this on my web site a while ago. And I hate missing Food Friday’s. I wanted to post a recipe last Friday too and couldn’t remember how to log in to the web site!

In an effort to find healthier snacks, I found a couple of books on creating healthy & tasty meals for backpackers at the library. One of the items in the books was dehydrated zucchini and tomatoes. These are actually quite tasty!
How to do it:
Slice the zucchini and tomatoes 1/8-inch thick ( I think it’s a bit thin for the tomatoes and will try slicing them a bit thicker next time)
Lightly spray the dehydrator screens with olive oil
Lay a single layer of veggies on each screen
Sprinkle with seasoning (I used a garlic herb blend)
Dehydrate at 145 degrees - for me, the zucchini took about 4 hours and the tomatoes about 5 hours.Go ahead and snack!
But be careful, they won’t last long!
