We had this potluck thing at church tonight, and everyone was supposed to bring sandwiches and a dessert. Knowing that sandwiches probably meant lots of white bread, I decided to make a healthy alternative so that I knew there’d be at least one thing there I could eat! So, I made these, and they were yummy!
Veggie Wraps
- 6 whole wheat tortillas
- 1 1/2 cups chopped fresh spinach (I used a food processor)
- 1 1/4 cups chopped sweet red pepper
- 1 1/2 cups chopped, seeded tomatoes
- 1 container light garden style cream cheese
- 4 slices cookes bacon, diced
Spread each tortilla with 2 Tbsp of cream cheese. Sprinkle with spinach, pepper, tomatoes and bacon and roll up. Enjoy!
This wasn’t something I normally would have tried for a church dinner thing since I never made it before, but everyone seemed to enjoy it - they all disappeared!
