This is what my husband always says to me whenever I tell him that “meatloaf is for dinner”. For Christmas my mom gave me a copy of her cookbook “Cooking for Christ” — she is currently trying to get it copyrighted and then hopefully published by the end of the year. She took recipes from friends and family and then also put in biblical recipes (an example would be Pleasing Squares — she then quoted Songs 1:3, 4:10, and 7:6 since they all contain the word “pleasing”) Anyways last night I tried my Aunt Debbie’s meatloaf recipe and it turned out really good. I made a few modifications but in the end it tasted like a stuffed pepper.
1 1/2 lbs of lean ground beef (or turkey)
1/2 onion and green pepper, chopped
1T Worcestershire Sauce
1 egg
2 slices bread, cubed (I used a whole wheat bun)
1/2 c. oats
1 (16oz) can of tomato sauce
Mustard, salsa, s/p, and celery salt to taste
Mix ground beef, onion, green pepper, Worcestershire, egg, bread and oats. Form loaf in lightly greased cake pan. Flatten top of loaf. Squirt mustard on top. (I skipped this since I don’t like mustard). Pour tomato sauce over loaf then salsa (I used 1/2 jar). Add salt, pepper, and celery salt on top of loaf to taste. Bake at 350 degrees for 40-45 minutes.
