Omelette in a bag

I had a retreat this weekend for work. One of the things we had for breakfast was SO COOL! I wanted to share the love.

You will need:

Freezer bags

Sharpies

A large pot of boiling water (it needs to be at a full rolling boil)

Eggs

Various omelette fillers (diced ham/onions/peppers/tomatoes, crumbled bacon, cheese (cheddar, cojack, feta, gorgonzola), mushrooms — whatever you like in an omelette.

Take the freezer bag and write your name on the outside with a sharpie (or permanent marker). Next crack 2 eggs into the bag and then add your fillers. I personally like some ham, peppers, onions, cheese, and a little bit of shredded potatoes (I use the frozen ones). I also put in my salt and pepper at this point. Using your hand mush the bottom of the bag until it is mixed up pretty well. Then push all of the air out of the bag and seal it up. Once you have all of your bags assembled and labeled (heaven forbid I’d get my husband’s with mushrooms!) put them into the boiling water, cover with a lid, and boil for about 15-20 minutes. Once they are done, unseal the bag and pour out onto a plate — it should be in the shape of a folded up burrito.

VOILA!! You have yummy omelettes that are all done at the same time (this is a big plus for a large family like mine) — plus my kids LOVE creating their own masterpiece.
