So we know now that the Bird eats Broccoli. And we know that we are supposed to be eating our veggies this week…and every week I might add! Broccoli is really, really good for you! So here comes a bountiful buffet of broccoli to bake, barbecue, blanch, boil, brown, or burn as your heart desires!
First up is Roasted Broccoli with Garlic from the invaluable Kalyn’s Kitchen. I’m sure you can tell by now that I’m a fan of just about anything which has the words Roasted andGarlic in the title. This looks easy and fabulous! And because great minds think alike, Bethany was also looking for Roasted Broccoli recipes and found Broccoli with Roasted Red Peppers! Go Bethany!
And here’s one from The South Beach Quick & Easy Cookbook -
Chinese Style Broccoli
- 1 Tbsp + 1 tsp canola oil
- 1 (1 1/2 pound) head broccoli, cut into florets (6 cups)
- 2 Tbsps low-sodium soy sauce
- 2 garlic cloves, minced
- 2 tsps fresh lemon juice
Heat oil in a large wok or high sided skillet over medium-high heat. Add broccoli and stir-fry for 2 minutes. Add other ingredients and continue to stir-fry until broccoli is crisp-tender, about 5 minutes.
Makes 4 servings. 80 calories per serving
We have some other broccoli recipes in our archives. Here’s a crockpot recipe - Broccoli Oriental from LadyLaura. And a main dish, Spicy Chicken and Broccoli which I typed up and forgot to try! Stephanie gave us the decadent looking Broccoli Parmesan and Tracy posted Stir Fry Pork with Vegetables, which even has snow peas for you pea-people!
Finally, here’s one I found by googling around… I can’t wait to try it!! Broccoli salad with creamy mustard dressing! It even has garbanzo beans in it -and that is almost always a good thing!
