Miraval Omelet

(Recipe adapted from Conscious Cuisine by Cary Neff)

Miraval Omelet
1/4 t olive oil
1/4 c diced fresh mushrooms
2 T chopped green onion
1/4 c diced tomato
1/4 c packed fresh spinach
1 T low fat cream cheese
1 whole egg plus 2 egg whites, lightly whipped
1/8 t sea salt
1/8 t ground pepper

Preheat broiler. Saute the veggies for about 5 minutes, until softened in a cast-iron skillet or other oven proof pan. Pour eggs over and season with salt and pepper. Cook until bottom is done and sides are firm. Spread cream cheese on omelet. Place pan in under broiler for about 2 minutes, until omelet is finished cooking. Fold and enjoy!
