Sorry, but I didn’t know that until now. One thing I love about the South Beach diet is how much healthier my family and I are eating!
I had a meaty turkey breast bone in the fridge and since it’s a chilly, wet day here in Waco, TX I decided to make soup with it. I simmered the bone in water with some salt and pepper for about an hour on low. Removed the bone and added 2 cups of lentils to the broth along with a generous amount of granulated garlic. I decided to put lentils in it because they don’t require pre-soaking and cook in 30 minutes. Plus they are high in protein, fiber, etc. I haven’t had lentils many times in my life. The times I did, I didn’t care for the dishes so I wasn’t expecting an extremely yummy dish–just being practical.
When the lentils were almost soft, I asked Nathan, “Should I put spinach or cabbage in?” He said cabbage, so in went 1/2 small head , chopped. (Something else that needed getting rid of.) Meanwhile I removed the meat from the bone and added that along with a bit more salt. This soup is so yummy! The combination of turkey and lentil flavor is delicious, in my opinion. My children even like it. Nathan had three bowls!
It’s a pretty soup too; wish I could show you a pic, but I don’t have a digital camera. Maybe Bird can post one later. I don’t know how to use his fancy-schmancy camera.
Now I am excited to try lentils in other dishes! I have seen some on the site, but Eric does not like curry so that’s out. I will keep looking. Let me know if you have any suggestions!
