Dry Jerk Seasoning

I’ve posted this before, but I wanted to spice you up by way of reminder!

from the cookbook Island Barbecue by Dunstan Harris

Dry Jerk Seasoning
*****************
1 tsp allspice
1 tsp chili powder
1/2 tsp nutmeg
1/4 tsp cinnamon
pinch garlic powder
1 tbsp salt - (could do with less)
1 tbsp onion powder
1 tsp coarsely ground black pepper.

Mix it all together! Yields about 3 heaping tablespoons.

Real Jerk is done with a wet marinade, and I have a great recipe for that too! But this recipe is great for some quick and easy spicy cookin’!  Several days ago I mixed about 2 1/2 Tbsps of the seasoning with 2 Tbsps of lime juice, then a dollop of extra-virgin olive oil.  I spooned/rubbed this all over a goodish batch of chicken tenders and we grilled them. Oooooh yeah. That’s what I’m talking about! :razz:

Then today I sprinkled a few tablespoons over a pork loin before searing and roasting it.  Also quite yummy!! 

So be a jerk and heat things up!
