Extreme Makeover ~ Apple Pie Bread

So I was browsing around yesterday, and ran across a VERY tempting recipe on LadyLaura’s blog…  Now see, what you may not know is that it’s things like that that truly are my weakness. Ice cream, no problem.  Big gooey desserts, don’t even try.  Cheesecake? Nah.  But something bready and cinnamony and apple-y….  Ohhhhh I feel weak.  But as you can see, LadyLaura’s recipe is NOT South Beach legal.

Apple Pie Bread

3 c flour
3/4 c sugar
4 t baking powder
1 t salt
1 t ground cinnamon
1 t ground cloves
smidge of nutmeg, if you like
1 1/2 c milk
1 egg
2 T canola oil
1 1/2 c diced apples (I leave skin on for nice color)

Mix dry ingredients together. In a seperate bowl, mix egg, milk, and oil together well. Stir milk mixture into dry mixture; fold in apples. Pour into lightly oiled large loaf pan. Bake at 350 for about an hour and 15 minutes. Let cool before removing from pan.

But it looked so good…I just had to try it!  So here is my South Beachified version.  I used a mix of flours, but of course all whole wheat could be used.  Splenda could be used to replace the sweetener, but I like to use maple syrup.  I used a lot less than the original recipe called for because my palate has become very sensitive to sweets.    My changes are in bold…

Beachified Apple Pie Bread

1 1/2 c whole wheat flour
1 1/2 c oat flour (made by throwing oats in my food processor!)

4 t baking powder
1 t salt
1 t ground cinnamon
1 t ground cloves
smidge of nutmeg, if you like
1/4 cup chopped pecans

1 1/2 c milk
1 egg
2 T canola oil
1/4 c maple syrup

1 1/2 c diced apples (I leave skin on for nice color)

Mix dry ingredients together. In a seperate bowl, mix egg, milk, maple syrup and oil together well. Stir milk mixture into dry mixture; fold in apples. Pour into lightly oiled large loaf pan. Bake at 350 for about an hour and 15 minutes. Let cool before removing from pan.

Naturally, with all that whole grain flour, the resulting bread is rather dense and heavy.  But if you’ve been hanging on the Beach for awhile, you’ll be used to that by now.  I enjoyed this both for an after dinner treat last night and for breakfast this morning!
