This recipe is from the Ultimate Weight Solution Cookbook. I made it last night but I didn’t use salmon, as I didn’t have any. I used tilapia. I think any fish would work as well.
1 T whole black peppercorns
1 T dried dill
1/4 t ground nutmeg
4 salmon fillets
2 T + 2 t dijon mustard
nonstick spray
Heat oven to 500. Heat the pan you will use while you are preparing the fish.
Grind the peppercorns. Add dill and nutmeg. Coat the fish with the mustard, then sprinkle seasoning on.
Spray the heated pan with cooking spray. Place the fish skin side down (if using salmon) on the pan. Roast the fish until done, about 10 minutes or so.
