The taste for curry, that is. Debs got there first, but I liked the sound of Red Dal Curry, so I tried it last night.
Here’s my dinner, The orange stuff is lentils (which went beautifully mushy), the red stuff is a very simple aubergine curry and then there’s baked chicken using CJ’s recipe. It was all delicious. Lots of leftovers too. I cooked a second chicken breast and used it in today’s lunch.
Curried Cashew Chicken salad with Quinoa. I substituted red onion instead of white, mange tout for baby peas and spring onions (scallions) for celery, ‘cos that was what I had. You could make it with any nice crunchy vegetables. Quinoa is useful stuff. So far I’ve tried it for breakfast with nuts and berries in or baked with cheese and veg in. This was a very tasty salad. I’d happily increase the curry powder and make it really tasty, but then I’m a big curry fan. There you go, four new recipes at once.
Ooh, and one I haven’t tried yet. CJ has a recipe for oatmeal cookies which looks yummy.
