Classic Vinaigrette
(this serves 3-4 individual salads in my house)
* 1 Tablespoon red wine vinegar or lemon juice
* 1-2 teaspoons Dijon mustard
* 1 medium shallot, minced
* 2-3 garlic cloves, minced ( I add this ’cause everything is better with garlic)
* 1 Tablespoon finely chopped parsley (I used dried, halving the amount)
* salt & freshly ground pepper
* 4 Tablespoons olive oil (I only use 3)
* optional: 1 teaspoon finely chopped tarragon
(This has a lot of variables–add whatever herbs and spices suit your fancy =)
Mix in a jar or bottle and refrigerate. Let it sit a couple of hours for the flavors to really blend. Shake before serving.
