cut up pieces of chicken
olive oil
garlic
can of diced tomatoes (including the juices from the can) red pepper flakes minced onion basil
Sautee chicken in oil (just a touch) and garlic in skillet/frying pan/wok over medium high heat until the chicken is at least half cooked. Add can of tomatoes (or more, depending on how many mouths you’re feeding), plus spices to taste. Stir and simmer. The longer you let this simmer, the thicker the sauce will become and the more the spices will seep into the chicken. Mine would’ve been very tasty after about 10 minutes — I ended up simmering it for about 30, which was fantastic. This is super-easy, quick, healthy (although I haven’t counted calories yet since I just made this last week!), and can be easily modified to anyone’s desired garlic/spciness levels. It makes the whole house smell delicious!
