My absolute favorite travel food is a black-bean turkey roll-up. Unfortunately, I can’t have the tortillas anymore. But I’ve found a work-around which I will share at the end….
From Pamela Smith’s Good Life cookbook:
Black Bean Dip
2 cans black beans, drained and rinsed
4 Tbsp finely chopped canned or fresh jalapeno peppers
2 Tbsp red wine vinegar
2 tsp chili powder (or to taste)
1/2 tsp creole seasoning
1/4 tsp cumin
1 Tbsp minced onion
1 tsp minced garlic
1 Tbsp chopped fresh parsley
Put in a food processor and blend.
From the same cookbook…
Turkey Tortilla Roll
2 Tbsp Black bean dip
2 Tbsp fat free sour cream
1 burrito size fat free flour tortilla
1 cup shredded mixed lettuce
2 oz turkey breast, sliced
4 strips red bell pepper
4 strips green bell pepper
2 tomato slices
Spread Black Bean Dip and fat-free sour cream onto tortilla to cover. Top with lettuce, turkey, peppers and tomatoes. Roll tortilla tightly burrito style, secure with toothpics and cut in half.
I don’t have the time or the inclination to use all those ingredients. My turkey roll-ups were usually just dip, turkey, and a tortilla - sometimes I would remember to add the sour cream and the peppers. It’s all good! Now that I can’t have the tortillas, I’ve been making open face sandwiches on Wava crisp bread. I just spread on the dip, top with a turkey slice, and chow down! That will probably be my #1 travel lunch along with broccoli and peppers.
