Tuscan Tomato Triscuit Treats!

Okay. The first thing you have to do is make the Balsamic Vinaigrette that Leann shared with us Friday, which you should do anyway because it’s delicious and much healthier than anything you’re going to buy in the grocery store:

1 c. olive oil
1/2 c. balsamic vinegar
3 to 5 cloves garlic,minced
3 tbsp. Parmesan cheese
Salt and pepper to taste
Whisk together vinegar, garlic and grated cheese. Gradually add the olive oil. Salt and pepper to taste.

Now. Take seven Reduced Fat Triscuits. (reduced fat Triscuits totally rock) Place them on a small baking sheet. (I use my toaster oven for this) Top each Triscuit with a slice of fresh tomato. Next, drizzle about 1/8 tsp of vinaigrette over each one. Finally, top each with a small pinch of shredded part-skim mozzarella. Bake at 400 degrees until it is “warm and squdgy” (that’s the technical term, dontcha know) Add a little pepper if you so desire and get ready to do the happy food dance. (yes, there really is such a thing. My brother and I can demonstrate)
