Got a can opener?
I completed this week’s challenge tonight. I thought I’d better it get it done before the weekend got here and I got side tracked.
I got this recipe at a Weight Watcher’s meeting that I attended last year, but I never did try it. I wish I would have tried it sooner…it was yummmmmmy and oh so easy
Taco Soup
3 can chopped tomatoes (I only used 2)
1 can rotel
1 can ranch style beans
1 can pinto beans
1 can whole kernel corn
2 cans of water (use the can from the beans)
1 pkg taco seasoning mix
1 pkg dry ranch dressing mix
1lb extra lean ground beef, cooked and drained
After cooking the ground beef, add all ingredients to a large dutch oven (at least 8 quarts). Bring to a boil over medium heat. Reduce heat and simmer 20-30 minutes.
Voila!
For those on weight watchers…1 cup = 1 point
