Okay…so last night I had two thawed chicken breasts and no clue what to do with them. I just knew I better come up with something quick because I had to dash out the door as soon as my husband came through it! I was also out of onions - and I just about can’t cook without onions, or so I thought…
Here’s what I came up with - and it was suprisingly tasty.
Two boneless skinless chicken breasts cut into small chunks
14oz can diced tomatoes
garlic powder, pepper, basil
whole wheat spaghetti
part skim mozzarella
I sauteed the chicken in a small amount of olive oil, sprinkling it with garlic powder and pepper. Then I dumped in the tomatoes and some basil - probably a teaspoon or so. I let that simmer while the water heated up for the spaghetti - and while the spaghetti cooked. I divided the chicken mixture in two over the noodles. (I carefully measured out a proper half cup of noodles for me) I then sprinkled on some mozzarella.
It might not be haute cuisine, but it was good!
