Squash & Tomato Tian

This recipe is from The South Beach Diet Parties & Holidays Cookbook

3 tsps extra-virgin olive oil

1/2 tsp dried thyme

1/2 tsp salt

1/4 tsp freshly ground black pepper

3 medium zucchini, thinly sliced

3 medium yellow squash, thinly sliced

6 plum tomatoes, thinly sliced

Heat oven to 400 degrees farenheit.  Brush a 9×13 inch baking dish with 1 tsp of the oil. Combine thyme, salt, and pepper in a small bowl. Combine zucchini and summer squash in a medium bowl.

Place half of the squash mixture in the baking dish and sprinkle with one third of the tyme mixture. Top with tomatoes and sprinkle with half the remaining thyme mixture. Top with remaining squash and sprinkle with remaining thyme mixture. Drizzle top layer with remaining 2 tsps of oil.  Bake until vegetables are tender, 30 to 40 minutes. Serve warm.
