I made this yummy soup last night for dinner and it was GREAT. I orginally found it on the Large Family Logistics blog and tucked it away. Well, our cupboards are pretty bare, but I had most of the ingredients to make this soup.
1 can corn, undrained
1 can diced tomatoes, undrained
1 can tomato soup + 1 can water
1 can black beans, undrained
1 can pinto beans, undrained (I used red beans b/c I didn’t have pinto)
1 tsp. minced garlic
1 Tbs. minced dried onions
Dump all in a pot, heat thoroughly, and serve. Ours made a nice thick hearty broth and needed no additional seasoning. With fresh onions, you might need to simmer a bit longer.
Seriously yummy. And think of all the fiber you are getting with the beans! Two thumbs up here.
