These burgers are modified slightly from a recipe in the marvelous El Paso Chile Company’s Texas Border Cookbook…
El Paso Burgers
3 long green chiles, roasted, peeled, and chopped OR 1 can roasted, chopped green chiles
2 lbs lean ground beef
2 green onions, trimmed and thinly sliced (about 1/3 cup)
3 Tbsps fat free sour cream
1/2 tsp salt
1/2 tsp pepper
Mix it all together, make patties, and grill. Serve with Chipotle-Lime Mayonnaise.
Chipotle-Lime Mayonnaise
3-4 chipotles in adobo
1 Cup reduced fat Mayonnaise
2 Tbsps lime juice
1 Tbsp fresh lime zest
1 Tbsp Dijon
Blend well in food processor.
Now. Normally one would, of course, eat these on buns, perhaps with lettuce. But we South Beachers eschew buns. And that’s okay! These burgers are great either way!
