Cousin Sue's Pumpkin Muffins


I don’t have a cousin Sue, and neither does Gary Smalley. But that’s the name of this recipe from his Food and Love cookbook…

 Cousing Sue’s Pumpkin Muffins

1 Cup honey

1/2 cup canola or light olive oil

3 eggs

1 1/2 cups canned pumpkin

1/4 cup water

3 cups whole wheat pastry flour

1 tsp cinnamon

1 tsp baking powder

1/2 tsp sea salt

1 cup chopped pecans

1/2 cup raisins (I omit these  - raisins are evil!)

 

1. Preheat oven to 400 degrees

2. Mix honey, oil, eggs, pumpking, and water with an electric mixer.

3. In another bowl mix flour, cinnamon, baking powder, and salt.

4. Add dry ingredients to liquid, and mix only until blended. Add nuts and (shudder)raisins.

5. Fill greased or lined muffin tins 3/4 full.

6. Bake for 15 or 20 minutes or until brown.

 

Makes approximately 2 dozen muffins.
