This recipe is from Dr. Gary Smalley’s Food and Love cookbook.
1 C honey
1/2 C canola or light olive oil
3 eggs
1 1/2 cups canned, plain pumpkin
1/4 C water
3 C whole wheat pastry flour
1 tsp cinnamon
1 tsp baking powder
1/2 tsp sea salt
1 C chopped pecans or walnuts
1/2 C raisins
1. Preheat oven to 400 degrees
2. Mix honey, oil, eggs, pumpkin and water with mixer
3. In another bowl mix flour, cinnamon, baking powder, and salt.
4. Add dry ingredients to liquid, and mix only until blended. (over-mixing makes tough muffins)
Add nuts and raisins. (I leave out the raisins…can’t stand em!)
5. Fill greased or lined muffin tins 3/4 full.
6. Bake for 15-20 minutes or until brown.
Yield: about 24
