Chicken Cacciatore

Good morning ladies!!  It’s food Friday!  Here’s one that’s become pretty common in my kitchen.  It’s from Atkins.

 Chicken Cacciatore

3 TBL olive oil

4 chicken breasts

1 small onion

1 1/2 tsp chopped garlic  (add more if you like garlic!!)

2 tsp fresh rosemary, chopped

1/2 c. dry white wine

1 tsp salt

1/4 tsp crushed red pepper flakes

1 1/2 cups canned plum tomatoes, drained and coarsely chopped

 

1.  In a large skillet, heat oil over mediem-high heat.  Brown chicken and transfer to a plate.  Add onion, garlic and rosemary to pan; cook about 4 min, until onion is softened.  Add wine and bring to a boil, stirring to loosen any browned bits.  Add salt and pepper flakes.

2.  Return chicken and accumulated juices to skillet.  Cook until almost all the wine has evaporated, about 2 minutes.  Add tomatoes.  Cover, reduce heat to low and simmer 30 minutes, until chicken is cooked through. 

3.  Transfer chicken to a serving platter.  Boil sauce 2 minutes to thicken; sppon over chicken.

 

Okay, Atkins calls for a whole chicken with skin and everything but we prefer breast so I changed that and I don’t normally add salt and we like our stuff saucy so I just dump in a can of diced tomatoes instead of the plum.
